What are we having for dinner tonight?
INGREDIENTS:
- 1 Tbsp. olive oil
- 1 small white onion, chopped
- 2 carrots, peeled and diced
- 2 stalks of celery, diced
- 4 cloves garlic
- 2(28 oz.) cans whole tomatoes (with their juices) (I used organic)
- 1(14 oz.) can cannelloni beans (I used organic)
- 3 cups shredded cooked chicken (I used organic)
- 2 handfuls baby spinach (I used organic)
- 1/4 cup roughly chopped fresh basil (I used organic)
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp.crushed red pepper flakes
Add all ingredients to the slow cooker, stir to combine, cook on high for 3-4 hours (or low for 6-8), I also add Adobo to everything no matter what the recipe is, but you do not have to add it.
It is a really easy dish to make and great for working moms. I love the slow cooker, it has really been one of the best gifts I have ever received. There are so many things you can make with a slow cooker. My kids really enjoy this dish. They love any type of soup dish. You can also use fish instead of chicken. If you haven’t done so yet switching to organic ingredients and fresh fruit & vegetables is a great idea. You will feel such a difference in your body. But that will be in another post 😀
